I am so glad that people are excited, not only eat better but get there kids involved. This week for dinner, I have done some easy things. On Monday, we had steak tacos. They were a huge hit!! Tuesday I had some chicken that I could not think of anything to make with it. Therefore, I used a bag of Spanish rice. We had rice and chicken. Last night was pork chops on the grill. Who would have thought that a grilled pork chop and ketchup would be a hit! But it was he ate a whole poke chop. We also have a veggie every night. I have found that if I let my son put the salt and pepper on the veggies that he eats more of them. The rule at every meal is 5 bits. That is all I ask. Yes, they are small bite to me but they are huge to him. When the whole family is sitting around the table and your 5 year old asks for more broccoli you know that you are doing something right. Therefore, here are my recipes from the last few night. Try them out and please let me know how it goes! Oh and with it being apple season, I wanted to throw in a trick. Go and pick your own apples. With the kids of course. Get an apple peeler. You put the apple on it and turn a handle and it takes the skin off the apple and cuts it. Kids love to do it. (With mom and dad, watching and helping when needed.) Take the apple cut it in bit size pieces, throw it in a pan with some cinnamon and sugar and you have homemade warm applesauce. Great for a mid day snack or an after dinner snack. The best part is the kids helped from start to end!
Steak Tacos (Steak Wraps)
1-2LB Steak. Any kind cut in bit size pieces
One packet of taco seasoning
Whole-wheat taco shells
Shredded Cheese
Shredded lettuce
Salsa
Cook the steak in a frying pan. I do not use and oil with it because the oil from the meat will prevent it from sticking to a non-stick pan. When meat is 95%, done add taco seasoning and water, per package. Cook until meat is coated in seasoning.
Taking one shell, add meat. Remember little kids cannot eat as much as we can. So start with 6-10 pieces of meat depending on the size. Add a sprinkle of cheese. I then warm in the microwave for 5 seconds that way the cheese sticks a little. Add lettuce and salsa. If the kids do not like salsa, you can skip it. I have also put ranch on it for my son. He loves it that way. A very easy dinner. You can add tomatoes and onions also. Even sour cream. I did not make an extra vegetable this night because my son will eat the lettuce on the taco with the salsa.
Spanish rice With Chicken. (Can also use ground beef)
One-pound chicken. Cut in bit size pieces.
One bad Spanish rice. (Whatever kind you can buy at the store)
Shredded cheese
Broccoli
Cook Chicken in frying pan. Again, I do not use oil because I have a non-stick pan. Cook until done. Add Spanish rice and water. Cook until rice is done and water is gone.
In separate pot, steam broccoli.
You can mix the broccoli in or serve on the side. Top with cheese. You can also add sour cream.
Grilled Pork Chops and Mashed Cauliflower
One-pound pork chops.
Head of cauliflower.
Season pork chops however, you like them. Place on grill. About 5-7 minutes per side. Depending on how thick they are. You want the juice to be clear when you cut it and NO pink in the meat.
Steam cauliflower in large pot. When done drain water and put in bowl. With a fork, mash the cauliflower. Add butter and salt and pepper to taste. Mix very well. I also like to add seasoning salt to it for a little more taste.
In addition, your child can dip pork chop in a sauce of there choice. Also, a great side is applesauce!

New to this.
Hello everyone. I am new to blogging. So we will see how this goes. I started this page because I am always looking for new things for dinner. I am also looking for ways to get my five year old in the kitchen to help me. We have tried many new things over the past few months. I have found that kids love things they can do them self. Like make pizza. The can put the toppings on themselves and how they want it. Besides they love pizza sauce and we wont tell them but its a veggie!! We even made our own pizza sauce this year. with tomato's and peppers in it. The best part is he love it! So over time i will share all the new things that we try and if they are a go or not. Oh by the way a veggie at every meal is a must. not matter what we are having.
